It's Apple Picking Season!

Contributor: Erin Singhal RDN, LDN

These beauties are loaded with soluble fiber, vitamins, minerals, and antioxidants. They are low in fat, cholesterol and sodium. What’s not to love-Right?

This is a healthy way to enjoy them without the loaded sugar that you get from traditional fall dipped apples.

Ingredients needed:

1 Apple

3 tbsp peanut butter

2 Tbsp mini chocolate chips

2 Tbsp Walnuts

Slice an apple horizontally so you get ½ inch circles

Cut the seeds out of the centers with a spoon or mini circle cookie cutter

Get 3 tablespoons of peanut butter and spread on the slices

Use 2 tablespoons of mini chocolate chips and sprinkle them randomly over the peanut butter

Roughly chop 2 tablespoons of walnuts (omega 3 and 6) and sprinkle over the slices

Variations and Substitutions:

Sun butter or almond butter to replace the peanut butter

“Enjoy Life” mini chocolate chips (completely allergy free) to replace the mini chocolate chips

Dark chocolate cacao shavings for a vegan option

Leave the walnuts off to keep it nut free

Cut the apple in boats, and put the peanut butter, mini chips and nuts in a small dish and dip

Try melting the peanut butter and drizzle over the cut apples or use as a dipping sauce

Use other nuts and seeds in place of the walnuts, like pecans, cashews, or pistachios

Try mixing up the nuts

Add hemp seeds for more Omega 3 and 6
