Chocolate Chip (Cream Cheese) Banana Bread -So GOOD and So Easy!




This bread was delicious! It was moist and flavorful.


This recipe can be made gluten free, dairy free or vegan

It is lower in sugar than traditional sweet breads--but you definitely do not miss the sugar


Ingredients:


1 1/4 cup flour (you can use gluten free, substitutions below)

1/4 cup brown sugar

1/4 cup sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/4 cup dark chocolate chips

6 tbsp margarine

4 oz (1/2 container) of vegan cream cheese or cow's milk cream cheese

1/4 cup almond, soy, or cow's milk yogurt

6 tbsp of vegan margarine

1 tsp vanilla extract

1 egg (or 1 tbsp flaxseed with 3 tsp water--mix well!)

2 medium bananas





Directions:


1. Preheat the oven to 350 degrees.


2. Combine egg or flaxseed mixture, sugars, margarine, yogurt, and vanilla extract with a whisk in a large mixing bowl. Add bananas and mash well.


3. Add flour, baking soda, baking powder to the mixture wet mixture (step 2) and mix well.


4. Grease pan--you can also lay wax paper and spray pan with cooking spray.


5. Spoon batter into a 9 x 10 pan. Bake for 30-35 minutes. Baking times can vary. Cool for 15-20 minutes.


6. Slice and Serve!


Notes:


Gluten Free flour such as Pamela's and King Arthur's measure for measure are great substitutes.

You can use regular sugar if you do not have brown sugar.

You can substitute 1/2 cup of stevia for the brown sugar and regular sugar.

Soy, Almond or Cow's milk yogurt can be used.

Vegan or cow's milk cream cheese can be used.

To substitute the egg, 1 tbsp of flaxseed mixed with 3 tbsp of water.




You can also make it ahead and refrigerate. Pull it out a half hour before baking.
