Beyond Burger Homestyle Meatloaf

This vegetarian take on "meatloaf" has become a family favorite. We really enjoy this meal during the holidays or as a weekend meal. It is simple to make, very flavorful --and make great left over sandwiches the next day!




Ingredients:


1 large onion, chopped

1 bell pepper, chopped

1-1 1/2 packages French onion soup mix. (each packet 1 ounce)

1/2 cup bread crumbs (can use gluten free)

1/2 cup milk (can use a dairy free milk)

1/2 tsp salt

1 tsp crushed red pepper

1/2 cup ketchup (Our favorite ketchup is Organic Heinz)




Directions:


Heat the oven to 350 degrees.


In a large bowl, mix the beyond burger, onion, bell pepper, french onion soup mix, bread crumbs, milk, salt, pepper together.


Place in a greased 9x 13 baking dish, or 4 small loaf pans.


Bake for 40 minutes. Remove from oven, spread 1/2 cup ketchup over the meatloaf or meat loaves


Continue to bake for another 15-20 minutes.


Prior to pulling out of the oven, make sure to check the temperature. The thermometer should read 160 degrees.

Options


You can mix the first 4 ingredients the night before--it makes for an amazing flavor! Add the breadcrumbs, milk, salt and pepper, mix well and place in pan to bake.


If you like it spicy, consider adding hot sauce or fresh jalapeños when you mix your ingredients.


If you like spring onions, you can use: 1/2 large onion chopped and 1/2 cup spring onion, chopped


If you are baking half the recipe, use a 5 x 9 inch loaf pan.


Instead of greasing a pan, you can also use parchment paper, leaving the sides long enough that you can lift the meatloaf out of the pan
